I made this on a Wednesday night and am writing this on the following Tuesday and the cake is still delicious! From my experience making cakes containing fruit: the fruit pieces can scorch if they touch the pan, and sometimes excess sugar in the batter can cause it to brown more along the crust, imparting an unpleasant bitter flavor to that part of the cake.
